  • Soak seaweeds in a bowl of hot water
  • Cut potatoes into small pieces. Add water and cover with plastic wrap so it would not oxidize with oxygen in the air.

Cooking with the roasted ribs

  • Boil a pot of water
  • Add slides of gingers, green onions, and Shaoxing wine.
  • Cook for 40 minutes
  • Add potatoes, cover and cook for another 25 minutes.
  • Add seaweed, season with salt, and white pepper.
