Spare ribs soup with seaweed and potatoes
- Soak seaweeds in a bowl of hot water
- Cut potatoes into small pieces. Add water and cover with plastic wrap so it would not oxidize with oxygen in the air.
Cooking with the roasted ribs
- Boil a pot of water
- Add slides of gingers, green onions, and Shaoxing wine.
- Cook for 40 minutes
- Add potatoes, cover and cook for another 25 minutes.
- Add seaweed, season with salt, and white pepper.
