Best Caramel Custard Pudding

Caramel

  • 20 mL of water
  • 80 grams of sugar
  1. On medium heat, boil water and sugar until golden brown
  2. Pour the caramel into the molds

Pudding

  • 3 egg yolks
  • 3 whole eggs
  • 500 mL of whole milk
  • 80+90 grams of sugar
  • 150 mL of heavy cream or half-half ( whole milk
  1. Separate 3 egg yolks from white
  2. Whisk gently

Warm Milk mixture

  1. Add milk to a small saucepan
  2. Add 80 grams of sugar
  3. At low heat, warm the milk, but not to boiling

Baking

  1. Pre-heat oven to 305 F
  2. Add warm milk while whisking
  3. Add 1 teaspoon vanilla extract
  4. Strain the mixture into a large measuring cup to remove any unbeaten egg white.
  5. Pour mixture into your molds, which already in a large baking pan
  6. Add boiling water up to 1/3 way of the baking pan
  7. Bake at 305 F for 45 minutes,
  8. chill in the fridge for at least 3 hours
