Spicy Chicken with Asian Fusion Sandwich


  • 4-6 skinless chicken thighs


  • 1 cup of buttermilk
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  1. Mix all ingredients in a bowl
  2. Marinate chicken thighs for at least 1 hours or overnight

Flour Mix

  • 2 Cups all-purpose flour
  • 2 teaspoon salt
  • 2 teaspoon garlic powder
  • 2 teaspoon smoked paprika
  • 1 teaspoon back pepper
  • 1 teaspoon chili power (spicy option)
  1. Mix all the ingredients in a bowl
  2. Drizzle some marinade over the flour mixture
  3. Coat the chicken with flour. Make sure to press hard against the flour


  • 2 Tablespoon ketchup
  • 2 Tablespoon honey
  • 2 Tablespoon soy sauce
  • 1 Tablespoon mirin
  • 1 Tablespoon brown sugar
  • 1 Table rice vinegar
  • 3-5 cloves of minced garlic
  • 1/4 cup of gochujang


  1. 1/3-full cast-iron frying pot
  2. Fry chicken in small batches for about 7 minutes per batch. Check its internal temperature reaches above 165 F. Science: Safe minimum cooking temperature to kill most bacteria in poultry.
  3. Cool on wire rack

Coat your chicken

  1. Add sauce in a large bowl
  2. Add fried chicken and mix to coat evenly


  • 3 cups of shredded cabbage
  • 1/4 cup mayonnaise
  • 2 Tablespoon honey
  • 1 Tablespoon apple cider vinegar
  • Salt
  • Optional Additions: cranberries, jalapeños, cilantro, dijon mustard
  1. Mix all ingredients above into a bowl.
  2. Mix well

Assemble Your Sandwich

  1. Toast your buns
  2. Add coleslaw, pickle, and chicken
  3. Enjoy
