Pork Bologna


  • 800 grams ground pork ( a mixture of chicken and pork)


  • 4 teaspoon sugar
  • 2 teaspoon season powder
  • 1 teaspoon (5 mL) baking powder
  • 2 1/2 Tablespoon (~45 mL) potato starch
  • 5 Tablespoon (~75 mL) cold water
  • 2 Tablespoon (30 mL) fish sauce
  • 5 vegetable oil

Dry Ingredients

  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon white pepper powder
  1. Mix all the marinade ingredient, except the pork, above into a small bowl
  2. Add pork to a 1 gallon Ziploc bag
  3. Add marinate mixture to Ziploc bag and mix well
  4. Flatten and freeze for 4-5 hours
  5. Remove and cut into smaller pieces
  6. Mix at the highest speed for 5-8 minutes, or until it is mostly smooth.
  7. Add the dry ingredients and mix for another 2 minutes
  8. Divide into 2 rolls using plastic wraps
  9. Wrap over with another layer of plastic wrap
  10. Wrap with aluminum foil
  11. Steam for 40 minutes, or until the internal temperature reaches 170 F.
