Moist and Crispy Baguette

Egg Mixture (250 grams total)

  • 1 whole egg
  • ~240 mL of water
  1. Zero a scale with a measuring cup
  2. Add egg to a measuring cup
  3. Add water until it reaches 250 grams
  4. Mix well

Butter Milk ( 3 Tablespoon)

  • 2 Tablespoon milk
  • 1 Tablespoon Lime Juice
  1. Add 2 Tablespoon milk to a cup
  2. Add 1 Tablespoon Lime Juice (Vinegar) to milk
  3. Mix well

Make the Dough


  • 450 grams all-purpose flour
  • 1 teaspoon salt
  • 2 1/2 teaspoon instant dry yeast
  • 1 teaspoon sugar
  • 1 Tablespoon vegetable oil

  1. Zero a scale with a mixing bowl
  2. Add and measure 450 grams of flour
  3. Add all other dry ingredients to a mixer’s bowl
  4. Add oil, egg mixture, and buttermilk
  5. Mix with a spatula
  6. Knead at low speed for 15 minutes
  7. Grease bowl and
  8. Roll the dough into a ball, place it in a bowl, and cover with a towel, and proof for 30 minutes
  9. Divide into 6 pieces
  10. Roll each piece into a baguette and play on a baguette tray
  11. Proof with two cups of boiling water for 1 hour in an oven.
  12. Remove and re-heat oven to 460 F
  13. On the bottom rack, place a baking tray and add 200 mL of boiling water
  14. Slice the dough and bake for 15-18 minutes until golden brown
  15. Brush with garlic butter
