Ingredients
- 100 gram whole wheat flour
- 200 grams all-purpose flour
- 1 teaspoon instant dry yeast
- 1 Tablespoon sugar
- 1/2 teaspoon salt
- 1 Tablespoon Olive oil
- 180 mL of water
Science: Whole wheat flour is higher in proteins and give a denser texture.
Making the dough
- Zero a scale with a mixing bowl
- Add and measure 100 g wheat flour and zero scale
- Add and measure 200 g all-purpose flour
- Mix all other dry ingredients in a bowl and mix well.
- Add oil and water
- Knead the dough until look smooth
- Lightly grease another bowl
- Roll and shape into a ball and put into a bowl
- Ferment for 1 hour at a warm temperature
- Dust cutting board with flour
- Remove the dough and knead a for few minutes
- Divide into 6 pieces
- Roll and shape into a ball and place on a baking tray
- Cover with a towel and let it rest for 15 minutes
- Roll each ball into a 5-inches circle
- *Optional: You can flavor with dry herbs and seeds
Cooking the bread
- Pre-heat pan on high heat
- Turn the bread after a few bubbles are formed
- Cook until it makes a large bubble
Science: Cooking at high heat increases the formation of steam quickly and form a large gas bubble.
