Make Perfect Pita Bread With Science


  • 100 gram whole wheat flour
  • 200 grams all-purpose flour
  • 1 teaspoon instant dry yeast
  • 1 Tablespoon sugar
  • 1/2 teaspoon salt
  • 1 Tablespoon Olive oil
  • 180 mL of water

Science: Whole wheat flour is higher in proteins and give a denser texture.

Making the dough

  1. Zero a scale with a mixing bowl
  2. Add and measure 100 g wheat flour and zero scale
  3. Add and measure 200 g all-purpose flour
  4. Mix all other dry ingredients in a bowl and mix well.
  5. Add oil and water
  6. Knead the dough until look smooth
  7. Lightly grease another bowl
  8. Roll and shape into a ball and put into a bowl
  9. Ferment for 1 hour at a warm temperature
  10. Dust cutting board with flour
  11. Remove the dough and knead a for few minutes
  12. Divide into 6 pieces
  13. Roll and shape into a ball and place on a baking tray
  14. Cover with a towel and let it rest for 15 minutes
  15. Roll each ball into a 5-inches circle
  16. *Optional: You can flavor with dry herbs and seeds

Cooking the bread

  1. Pre-heat pan on high heat
  2. Turn the bread after a few bubbles are formed
  3. Cook until it makes a large bubble

Science: Cooking at high heat increases the formation of steam quickly and form a large gas bubble.
